This casserole version is tasty, easy and delicious.  We just had it again recently when The Grocery Game had hot dogs on sale for cheap, so I re-photographed this dish {cause last time was beyond U-G-L-Y} and decided to share it with you again on Flashback Friday.

Korean-Style Chicken Noodle Bowls & Weekend Potluck #34

Welcome to Weekend Potluck, where friends & foodies meet and eat alllll weekend long! 

But first, Flashback Friday, because some recipes are worth repeating!  {even if the photo is ugly}  I am going to have to make this soon and rephotograph it, but trust me, it’s SO yummy!

Korean-Style Chicken Noodle Bowls

Salt and pepper
1 box (13.25 oz) whole wheat spaghetti
One 1-inch piece fresh ginger, peeled and grated
4 large cloves garlic, pressed
1/2 c tamari or soy sauce
6 T honey
4 T tomato paste
4 T rice vinegar
2 T sesame oil
1 t Sriracha hot sauce (do 2 t. if you like heat) [found in the ethnic section of your local grocery store, it’s Dale’s FAVORITE hot sauce]
2 T oil
1 pound skinless, boneless chicken meat, cubed
1/2 bag cole slaw mix
1 red pepper, thinly sliced
2 cups sliced mushrooms, sautéed in butter
1/2 cup chopped carrots
1 bunch green onions, thinly sliced
Toasted sesame seeds, for garnish

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente. Drain and place in large serving bowl.

Combine in a small pot, a splash of water, the ginger, garlic, tamari, honey, tomato paste, vinegar, sesame oil and hot sauce whisking until smooth and heated. Pour sauce over noodles and keep warm.

Get all of the remaining ingredients ready for a quick stir-fry.

In an oversized skillet, saute mushrooms in 2 T butter, remove from pan. Add 2 T oil, and heat over high heat. Add the chicken cubes and stir-fry until browned, about 3 minutes. Add the cabbage, carrots and bell pepper and stir-fry for 2 minutes, then add the green onions and toss for 1 minute. Add back in the mushrooms and empty skillet contents over noodles and top with sesame seeds. Serve immediately. 

I am telling you, when you take your first bite of this, you are going to think you are at a P.F. Chang’s restaurant! YUM! The sesame oil takes this dish over the top and so does the sriracha sauce, so no skipping!

Kansas Cornbread Salad & Oven Free Weekend Potluck #27

 Welcome to the 27th Edition of Weekend Potluck! Where Friends & Foodies meet and eat allllll weekend long.

  And today’s Flashback Friday recipe, a salad from the archives that is so colorful and unique! Plus, it tastes amazing! 

Um, sooooo, it’s not actually 100% oven free because of the cornbread muffins, but I still shared it.

Forgive me? 

  I use my toaster oven, so I didn’t have to heat the whole house.  That helps, right?!  :)  You could also buy some cornbread muffins from your bakery and crumble those.

 
KANSAS CORNBREAD SALAD

Ingredients

  • 8-½ ounces, weight Package Corn Muffin Mix
  • 10 slices Bacon, crisply cooked and crumbled
  • 8 ounces, weight Sour Cream
  • 1 cup Miracle Whip
  • 1 ounce, weight Packet Ranch Salad Dressing Mix
  • 3 whole Large Tomatoes, Chopped
  • 15 ounces, weight Can Pinto Beans, Drained
  • 15 ounces, weight Can Black Beans, Drained
  • 2 cans Corn, Drained (15 Ounce Cans)
  • 1 cup Chopped Red Pepper
  • ½ cups Chopped Green Onion
  • ⅓ bunches Cilantro, Snipped
  • 2 cups Shredded Colby-jack Cheese

Prepare muffin mix, according to package directions. (I do 1 pan rather than 001messy muffin tins)

When it’s done, cool and crumble. Set aside.

Cook and crumble bacon, set aside.

Combine sour cream, Miracle Whip and dressing mix, set aside.

Combine tomatoes, beans, corn, peppers, onions and snipped cilantro; set aside.

In a 9×13 glass dish, layer half of the crumbled corn bread, half of the bean mixture, half the bacon and 1 cup of cheese.  Spread with half of the dressing mixture.  Next, spread remaining bean mixture, bacon, dressing, cheese and end with remaining Cornbread crumbles.  Cover and chill.   ENJOY, it’s GOOOOOOD!

But, first up, Flashback Friday!  Because some things are just WORTH repeating!  Here is our FAVORITE Pasta salad, despite it’s not so cool name, it is colorful, zesty and all kinds of good!

I’d like to take a minute and say thank you to Joy, for teaching me to shoot manual, because THIS was last years pic and post :

Hmm.  No so hot.  Now, for THIS years pic. Better, right!? :) YAY!

Linguini Oh Yeah!

Ingredients

  • 1 pound Linguini Noodles
  • 1 whole Large Cucumber, Seeds Removed And Diced
  • 2 whole Medium Tomatoes, Diced (Grape Tomatoes Are Prettier!)
  • 10 sliced baby Carrots
  • 4 whole Green Onions, Sliced
  • 5 Tablespoons Salad Supreme Seasoning (about Half The Jar)
  • 10 ounces, fluid Wishbone Italian Dressing
  • 1 dash Salt And Pepper

Prepare this salad one day in advance!

Cook and drain linguini noodles according to package instructions. Mix the cooked noodles and all remaining ingredients together until they are evenly coated. Refrigerate overnight. Serve cold.

Southwest Rice and Bean Salad with Sweet & Spicy Dressing and Weekend Potluck #25

  Happy Friday, everyone!  Before I go on to Weekend Potluck, I wanted to Flashback to an old favorite from last summer.  I don’t know about you, but I am always trying to find ways to fill our tummies in healthy and low-cost ways, and this salad fits the bill.  Serving beans and rice at least one meal a week, can drastically reduce your overall grocery bill each month! 

 Never in a million years would I have expected the flavors of the dressing to be so perfect with the basic bean & rice base.   Try it, you won’t be sorry.  This is one of those meals that can be waiting for you after a fun afternoon at the pool this summer, since it’s great room temperature or cold from the fridge! 

 

Southwest Rice and Bean Salad with Sweet & Spicy Dressing

For the Salad:

 4 cups cooked brown Basamati rice, warm or at room temperature

1 – 6 oz box Uncle Ben’s Wild Rice, prepared according to directions

1 (15-oz.) can black beans, drained and rinsed

1 (15-oz.) can pinto beans, drained and rinsed

2 cups cooked, seasoned, cubed chicken

1 (12-oz.) can corn, drained

4 green onions, chopped

2 t. salt

2 T. Garlic powder

For the Dressing:

1/4 cup fresh lime juice 2 T. red wine vinegar 2 T. packed brown sugar 2/3 cup olive oil 4 pickled jalapeno pepper rounds, finely chopped 2 teaspoons chili powder 1 teaspoon cumin

Combine all of the salad ingredients together in a large bowl. Combine dressing ingredients and whisk well. Toss with salad. Serve warm or at room temperature.  Serves 8-10.
