Hearty Vegetable Hamburger Soup

  This recipe comes from my best friend’s momma.  I am not normally a big veggie soup fan, but when I heard it had 2 cans of tomato soup in it, it peaked my curiosity!  It didn’t disappoint and the whole family DEVOURED IT! (Plus, how can you go wrong when it contains a WHOLE stick of butter?!?!?!)  🙂

Hearty Vegetable Hamburger Soup

Ingredients

  • 1 stick Butter
  • 1 quart Water
  • 1 whole Medium Onion, Chopped
  • 2 cups cubed Potatoes
  • 2 cans Tomato Soup
  • 1 teaspoon Pepper
  • 1 cup Flour
  • 2 pounds Ground Beef
  • 1 cup Celery, Chopped
  • 2 cups Mixed Veggies Or 1 Cup Corn, 1 Cup Green Beans
  • 1 cube Beef Bouillon

  In a saucepan, melt butter and make a smooth paste with 1 cup flour. Add water. In your soup pot, brown meat and drain. Add paste and remaining ingredients. Simmer on low for several hours.

This soup has incredible flavor!!!! You will love it!

*Your soup will not be as thick as pictured, until day 2. Next time I will add more liquid before serving leftover soup.

  1. Looks wonderful! Oh Honey – let’s not forget that stick of butter that adds yumminess too. lol I was raised on soup and didn’t make it for years after we were married…I was sick of it. When I spent a month in the hospital recovering from brain tumor surgery, I fell in love with soup again and now I LOOOOOVE it! (It was easy to eat and nourished me). You can be sure I will be making this soon. Hubs and I just talked a few days ago about eating more soups…thanks for sharing!

  2. Oh heavens yes….I’m fine. I have some paralysis on one side of my face, am totally deaf in my left ear, but those are small prices to pay for good health. That’s really been my only BIG health issue and I was 38 when that happened…over 20 years ago. It was a glorious experience really…God was SO real and BIG to me during that time, I’m very thankful for all I learned in that process. I have some really great stories to tell about my grandkids talking out the side of their mouths….just like their nana. haha One thing I love to tell is that I use to complain to God that I cried much too much, so He answered my prayers in a very unusual way. Now I cry exactly half as much as I use to…cause only one eye tears when I cry. Pretty tricky I’d say? Do you know ANYONE else who can do that? *_*

  3. Very similar to my mom’s vegetable soup. I make it exactly the same way she did, but it does not taste quite the same.

    I remember when I was in college (cough)30 years ago, I had to do some project work at a hospital about 40 miles from home. It was snowy, rainy, slushy, and I had to drive for about 20 miles on a 2-lane, curvy road to get home. I remember telling one of the ladies at the hospital before I left that day, “This would be a good day to have vegetable soup.” Way back before cell phones right!

    When I got home, my mom had prepared a big pot of vegetable soup! Small thing, but God does work in mysterious ways! I still smile when I think about walking into mom’s kitchen that afternoon!

  4. I made this for dinner tonight and we both really enjoyed it I have a feeling it’s even better the second day!
    It was a nice change after all the rich Christmas food:)
