Destiny made her FIRST pie this week, I was so proud. She has always been a great help in the kitchen, but lately she has been asking to do things herself. Case in point, Bean Burritos for lunch and now, this lovely Farmhouse Strawberry Pie. Great recipe from the Country Cook, follow the link to get it!

Speaking of pie, Drea made this Lemon Cream Cheese Pie for Dale and I when we went to Florida over Spring Break and we went GAGA over it. Dale doesn’t like sweets, but he LOOOVES Lemon Desserts because of the nice tart flavor to balance out the sweet.
If you like the tang of lemon coupled with creamy whipped cream cheese, then this is the Pie for YOU! Plus, it comes together in moments!
Lemon Cream Cheese Pie

Ingredients
- 8 ounces, weight Cream Cheese, Softened
- ½ cups Sugar
- 15 ounces, fluid Good Quality Lemon Pie Filling, Divided
- 8 ounces, weight Cool Whip , Thawed
- 1 whole Graham Cracker Crust, 9 Inch Size
Preparation Instructions
In a small bowl, beat cream cheese and sugar until smooth. Beat in half of the pie filling. Fold in the whipped topping. Spoon into crust. Spread remaining pie filling over cream cheese layer. Refrigerate for at least 15 minutes up to several hours before serving.

Yay for Destiny! I remember when I made my first pie, I was 12. By the end of summer I rivaled my momma! Next summer I took it to the county fair, and I’ve got a trophy to prove it! Maybe not this summer, but next summer Destiny should enter in the county fair! It’s fun, good-natured competition.
You know, we talked about entering this year! Might just have to do it! 🙂
Yes, please do… she’ll have a blast! That was how I got my start in cake decorating – competing in the 4-H contest at the fair every year – and I still do it today!
Yummy! This is something different that I have not made before! I think I am going to try it out.:) Where do you get the lemon pie filling tho? I guess I have never really looked for it.:)

Awww Destiny looks so excited! =) I think I was about 14 when I made my first pie, and since then my mom’s dubbed me the ‘pie making girl’ because of all the pies I’ve made and been asked to make over the years! =) I have never made a lemon pie though… so I’m saving this recipe to try it sometime this summer! My husband loves lemon too, even eating them just as they are (whole, fresh lemons)!!! Crazy man! =)
