Parmesan Dill New Potatoes

Happy Monday! Hope you had a wonderful weekend!  I am sooo tired! Our weekend was jam packed, and for the second Saturday in a row, I shot a wedding.

Here is my favorite shot, because sometimes, you just CANNOT take another “ordinary” family photo.  This sweet bride was so laid back, we had to move all her photos and the entire reception inside, due to some CRAZY strong wind.  And she just kept right on smiling…. 🙂

We also enjoyed some first “fruits” from our garden over the weekend, and made up a new recipe!  It got 2 thumbs WAY up from each and every one of us!

The fresh dill couples wonderfully with the crunch of the toasted parmesan cheese, and tender new potatoes!

Parmesan Dill New Potatoes (2)

Ingredients

  • 15 whole Small New Potatoes
  • 2 Tablespoons Olive Oil
  • 3 sprigs Of Fresh Dill
  • ½ cups grated Parmesan Cheese
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Fresh Cracked Pepper

Preparation Instructions

Scrub 15 {more or less based on your potato size, obviously) new potatoes and cut larger ones in half, so they all cook evenly. Our favorite new potatoes are about the width of a golf ball. You may use more or less potatoes until you have nicely filled a skillet.
Drizzle potatoes with olive oil and pan fry for 10-15 minutes until nicely browned and soft.
Sprinkle with Parmesan cheese, salt, pepper and lastly, dill with stem removed.
Serve immediately.

AMAZING!  {if I do say so myself, and I DO!}  🙂

  1. Hey Tonya, This is totally off the subject of recipes and wedding photos…Do you know that in Google Reader and now in Feedly the title of your blog shows as (title unknown)? I always think it’s strange and figured that if you didn’t know, you would want to. Have a great day!

  2. You are so creative! How we love those new taters…and this recipe sounds so delicious. Thanks for sharing. Enjoy a blessed week ahead Girlfriend. XO

I adore hearing from you, comment away! :)
