Breakfast In A Blanket

  I always feel better when I send my kids out the door to school with a hearty breakfast in their tummies! 

  When whole wheat refrigerator biscuits went on sale 10 for $10 at Dillons, I had to come up with something other than biscuits and gravy every morning, although I doubt my family would’ve complained!!!

  This is what I came up with:

Ingredients

  • 1 cup Cooked Eggs, Scrambled, Fried Or Hard Boiled
  • 16 whole Cook And Serve Sausage Links
  • 1 can (17.3 Oz) Grands Whole Wheat Biscuits
  • 1 cup Colby Jack Cheese
  • Garlic Powder, To Taste

Preparation Instructions

Cook eggs to your liking, season to taste. Set aside. I did hard-boiled eggs the night before, so I was able to just peel, slice and salt them.
Heat 16 cook and serve sausage links, per package directions.
Press each biscuit flat and stretch edges to make a large circle to fill with breakfast items.
Add several strips of seasoned egg, 2 sausage links (only 1 pictured but it wasn’t enough) and a sprinkle of cheese.
Roll biscuit up and around breakfast items and press to seal. Sprinkle each roll with a dusting of garlic powder.

Bake at 375* for 15 minutes or until biscuits are golden brown. Serve dipped in a cream gravy. ketchup, or tastes great plain, too.

Add sautéed peppers or switch to crumbled sausage; the possibilities are endless!  You will love serving your kiddos a hearty Breakfast before school again….
