We had such a fun time in Florida earlier this summer, with Papa Clay & Grammy Drea! The company, the beach, the sunshine, the food. Drea is a fantastic cook, and she and I love to pour over recipes together. Whenever we go visit them, I come home armed with new ones to make after tasting her creations.
And guess what? Today is her BIRTHDAY! So it would be terrible to post a blog about her without at least saying,
Happy Birthday to you, Drea!!!
Thanks for taking such good care of my Daddy for me, and being such a special part of our family…..your joy is evident, you face life with courage and strength, and you are such a wonderful, fun person to be around!
I want to share this YUMMY side salad we had with our supper one night, during our stay with them.

Move over green dinner salad with Ranch, there’s a new gal in town…and she is sweet and a little fruity!

But, now that you mention it…….she is a bit fruity at times. 😉
Love how much fun they have together!
- 8 cups Butter Lettuce & Spring Mix Lettuce
- 8 ounces, weight Mandarin Oranges, drained
- 6 ounces, weight Craisins
- 4 ounces, weight Feta Cheese
- 1 cup Sliced Strawberries
- 16 ounces, fluid Poppyseed Dressing
Separate into each salad bowl, 8 cups of lettuce blend. Drain mandarin oranges, and portion out per your taste. Next, do the same with craisins, feta and strawberries.
Right before serving, drizzle each bowl with poppyseed dressing.
(Champagne dressing is also a fantastic option!)
