Pig Poo

  Despite it’s crazy name, this appetizer is AH-MAZING!  Imagine Bacon Wrapped Jalapenos, taken to a whole new level!

I give you Pig Poo: sweet little peppers, seasoned cream cheese, a LITTLE SMOKIE and a piece of bacon, baked to perfection…….

Thanks to my Momma for bringing over all the ingredients and helping us make this for Snack Supper Sunday night!

Pig Poo

  • 12 ounces, weight Mini Bell Peppers {Or Jalapenos}
  • 8 ounces, weight Softened Cream Cheese
  • ½ teaspoons {up To 1 Tsp} Chili Powder
  • 1 teaspoon Cumin
  • 1 cup Mexican Blend Shredded Cheese
  • 14 ounces, weight Package Little Smokies
  • 12 ounces, weight Raw Bacon, Cut Into 3rds
  • Toothpicks

Preparation Instructions

Whip together cream cheese, seasonings and cheese. Cut mini peppers in half and clean out seeds, fill with cream cheese, tuck a little smokie on top and a piece of bacon secured with a toothpick.
Place on a broiler pan and cookie sheet and bake at 375* for 30 minutes, or until the bacon is crisp. 

Serve hot. Bet you can’t just eat one!!!

Ham & Cheese Pinwheels

These will be perfect for your Super Bowl Party! Hearty, easy and oh-so good!

  • 8 ounces, weight Refrigerated Crescent Roll
  • 1 package (9 Oz Size) Smoked Ham {I Did Shredded From A Ham Roast}
  • 4 teaspoons Yellow Mustard  {Creamy Horseradish Sauce can be substituted}
  • 1 cup Shredded Cheese, Swiss Or Cheddar
  • 2 Tablespoons Sesame Seeds

Heat oven to 375*. Unroll crescents into 4 rectangles, sealing triangle edges to form 1 solid rectangle. Spread dough with your choice of yellow mustard or horseradish, layer a thin layer of ham and some shredded cheese. Starting on the shortest side, roll up and seal. Sprinkle with sesame seeds and slice with a serrated knife into 5 slices. Lay flat on cookie sheet. Repeat with remaining dough. Bake for 15-20 minutes. Serve warm with Ranch dressing for dipping.



Hummus Pizza

  If you love Mediterranean cuisine, you will love this Hummus Pizza!  This yummy pizza uses hummus and kalamata olives. Instead of buying a whole jar of these expensive olives, just go to your local salad or olive bar and buy a few instead……then you can really enjoy this pizza guilt free!

Preparation Instructions

  • 1 whole Refrigerated Pizza Crust Or Enough Dough For 1 Crust
  • 1 Tablespoon Olive Oil
  • 1 whole Garlic Clove, Pressed
  • 2 whole Roma Tomatoes
  • ¼ whole Medium Red Onion
  • 1 whole Seedless Cucumber, Thinly Sliced
  • ½ cups Pitted Kalamata Olives
  • 7 ounces, weight Garlic Hummus Spread
  • 12 ounces, weight Quartered, Marinated Artichoke Hearts, Drained. (I cut them smaller)
  • ⅓ cups Mediterranean Seasoned Feta Cheese Crumbles (I Found No Mediterranean And Did Seasoned Instead)

1. Preheat oven to 425F. Unroll dough onto bottom of lightly greased bar pan or cookie sheet. Gently stretch and press dough to cover bottom. Combine oil and garlic and brush over dough. Bake crust 12-14 minutes or until light golden brown.
2. Meanwhile, for toppings, slice tomatoes in half, scrape out seeds and dice. Thinly slice onion. Slice and quarter cucumbers and chop olives.
3. Remove crust from oven and cool. Spread hummus evenly over crust. Arrange tomatoes, onion, cucumbers, olives and artichokes over hummus. Sprinkle with feta cheese. Cut pizza into squares and serve.
