This recipe comes from my best friend’s momma. I am not normally a big veggie soup fan, but when I heard it had 2 cans of tomato soup in it, it peaked my curiosity! It didn’t disappoint and the whole family DEVOURED IT! (Plus, how can you go wrong when it contains a WHOLE stick of butter?!?!?!) 🙂
Hearty Vegetable Hamburger Soup

Ingredients
- 1 stick Butter
- 1 quart Water
- 1 whole Medium Onion, Chopped
- 2 cups cubed Potatoes
- 2 cans Tomato Soup
- 1 teaspoon Pepper
- 1 cup Flour
- 2 pounds Ground Beef
- 1 cup Celery, Chopped
- 2 cups Mixed Veggies Or 1 Cup Corn, 1 Cup Green Beans
- 1 cube Beef Bouillon
In a saucepan, melt butter and make a smooth paste with 1 cup flour. Add water. In your soup pot, brown meat and drain. Add paste and remaining ingredients. Simmer on low for several hours.
This soup has incredible flavor!!!! You will love it!
*Your soup will not be as thick as pictured, until day 2. Next time I will add more liquid before serving leftover soup.
