Chicken Challenge Day 5: Swiss Chicken Bake

We are continuing this week with the final days of my Chicken Challenge!  I hope you are getting motivated so far to try some new chicken recipes for supper.

  My family enjoyed ALMOST everything about this dish!  They could’ve done without the top layer, you decide for your family which way to make it….

Swiss Chicken Bake

Ingredients

FOR THE CASSEROLE:

  • 13 ounces, weight Thin Whole Wheat Spaghetti, Cooked And Drained
  • 12 ounces, weight Frozen Spinach, Thawed And Squeezed Dry
  • 2 cups Diced, Cooked, Seasoned Chicken
  • ½ cups Half-and-half
  • ⅓ cups Shredded Parmesan Cheese
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ teaspoons Nutmeg
  • 4 strips Bacon, Cooked And Crumbled
  • 6 ounces, weight Sliced Portabella Mushrooms
  • 1 cup {heaping} Swiss Cheese

FOR THE TOPPING:

  • 4 whole Eggs, Lightly Beaten
  • 1 cup Ricotta Cheese
  • ¼ cups Chopped Onion
  • 1 clove Garlic, Pressed

  In a large bowl, combine cooked spaghetti, spinach, chicken, cream, Parmesan cheese, salt, pepper and nutmeg. Place in a greased 2 qt. square baking dish. Top with cooked and crumbled bacon, mushrooms and Swiss cheese.
In a small bowl, combine eggs, ricotta, onion and garlic, spread over bacon, mushrooms and Swiss cheese layer. Sprinkle with additional Parmesan if you’d like.
Bake, uncovered, at 350* for 30-35 minutes, or until bubbling.

Tomato Basil Pasta Cream Sauce with Kielbasa Sausage & Mushrooms

Say that title 10 times fast! 

Actually don’t.

  Your mouth will be too full of creamy, tomato-ey, delicious goodness. 

Didn’t your Momma teach you to never talk with your mouth full?!?!?!

Tomato Basil Pasta Cream Sauce with Kielbasa Sausage & Mushrooms

  • ½ whole Onion, finely chopped
  • 1 cup Green Onions, Optional
  • 5 cloves Garlic, Pressed
  • 4 Tablespoons Butter
  • 16 ounces, weight Sliced Mushrooms
  • 1-½ pound Kielbasa Sausage, Sliced
  • 24 ounces, weight Classico Spicy Tomato Basil Spaghetti Sauce (no Worries, It’s Not Spicy!)
  • 2 cans Tomato Sauce, 15 Oz. Each
  • 1 Tablespoon Italian Seasoning
  • 2 teaspoons Salt
  • Cracked Pepper To Taste
  • 4 whole Fresh Basil Leaves, thinly sliced
  • 1 sprig Rosemary, Snipped
  • 1 pint Heavy Cream
  • 4 Tablespoons Corn Starch
  • ½ cups Cold Water
  • 1 box Whole Wheat Linguini Pasta Noodles

  In a large pot, melt butter. Add white onion, mushrooms and pressed garlic.
Add in the sliced sausage and cook until browned. Stir in green onions if using (I have excess in my garden right now, so I put g.onions in everything!)
Stir in salt, seasonings and sauces. Slice basil in thin strips and stir in. Cook over medium heat, stirring occasionally.
Blend cold water and corn starch, then slowly stir into tomato sauce. Continue to stir as it heats and thickens. (about 20 minutes)
Cook pasta, rinse and drain while you wait.
Whisk in the heavy cream, turn burner to medium-low heat. Simmer for 10 minutes.
Ladle over noodles when ready to serve. 056
Dig in~ this is truly a delicious dish! 
I’d say company worthy even!
