Asian Noodle Salad

  This is the COOLEST salad ever!  I found it on PW’s site a couple of summers ago and it never fails to deliver. Its colorful, its unique and it’s delicious too!

Asian Noodle Salad collage

SALAD INGREDIENTS:

  • 1 package Linguine Noodles, Cooked, Rinsed, And Cooled
  • ½ heads Sliced Napa Cabbage, Or More To Taste
  • ½ heads Sliced Purple Cabbage, Or More To Taste
  • ½ bags Baby Spinach, Or More To Taste
  • 1 whole Red Bell Pepper, Sliced Thin
  • 1 whole Yellow Bell Pepper, Sliced Thin
  • 1 whole Orange Bell Pepper, Thinly Sliced
  • 1 bag Bean Sprouts (also Called Mung Bean Sprouts)
  • Chopped Cilantro, Up To 1 Bunch, To Taste
  • 3 whole Scallions, Sliced
  • 3 whole Cucumbers Peeled And Sliced
  • 1 can (about 10 Oz.) Whole Cashews, Lightly Toasted In Skillet

FOR THE DRESSING:

  • 1 whole Lime, Juiced
  • 8 Tablespoons Olive Oil
  • 8 Tablespoons Soy Sauce
  • 2 Tablespoons (up To 3 Tablespoons) Sesame Oil
  • ⅓ cups Brown Sugar
  • 3 Tablespoons Fresh Ginger Chopped
  • 2 cloves Garlic, Chopped
  • 2 whole Hot Peppers Or Jalapenos, Seeded and Chopped
  • Chopped Cilantro

Mix salad ingredients together. Whisk dressing ingredients together and pour over salad. Mix with tongs or hands and serve on a platter.

Note: dressing keeps for up to three days before serving, without cilantro.

  Now be warned, this says it serves SIX.  I think it could serve SIXTEEN! It made 2 HUGE bowls full.  Either plan to serve a crowd or half this baby.  I do not care for it leftover as the spinach gets soggy.

PW’s Mushroom Swiss Burgers with Spicy Fry Sauce

Man, do I love a good burger!

Avery: “K, good I wanted to make sure it wasn’t from my nose.”

  Yup, no worries there darlin’!!!!

  You can’t go wrong with a recipe from The Pioneer Woman, Ree Drummond.  We’ve made these TWICE now!

  Most of the time when I make her stuff we just say yum and keep going, I don’t bother blogging it because it’s already made its mark in the blog world and probably even on her TV show!  BUT, for these burgers, I am going to make an exception and post something of hers.  We did these full size, rather than sliders and doubled the Spicy Fry Sauce.  I will post my changes, if you want her original follow the link back to her amazing food blog.

PW’s Mushroom Swiss Burgers with Spicy Fry Sauce

Mushroom Swiss Burger (3)

Ingredients

  • 2/3 cup Mayonnaise
  • 4 Tablespoons Ketchup
  • 1 teaspoon Cayenne Pepper (less If You’re Sensitive To Spice!)
  • 4 Tablespoons Butter
  • 1/2 whole Medium Onion, Finely Diced
  • 8 ounces, weight White Mushrooms, Chopped Finely
  • 4 dashes Worcestershire Sauce
  • Kosher Salt And Freshly Ground Black Pepper
  • 8 burger patties
  • 8 slices Swiss Cheese
  • 8 whole wheat burger buns, toasted with butter

Make your Spicy Fry Sauce:  In a small bowl, mix mayonnaise, ketchup, and cayenne. Stir together until totally combined. Set aside.

While hubby is out grilling your hamburger patties, seasoned just the way your family likes, melt butter in a large skillet. Add onions and cook over medium heat for five minutes, stirring frequently. Add mushrooms and toss around, then add Worcestershire, salt and pepper. Cook for several minute over medium heat, or until all liquid has evaporated.

Have hubs bring in the grilled burgers, add a bloop (yes, that’s a word) of mushrooms and onions to the top, and cover with a slice of swiss.  Send him back out to melt the cheese on the hot grill.  While he is gone, butter toast the hamburgers buns, then smother in fry sauce.  Assemble and serve with curly fries.

Basement Birthday, MCC & Ree Makes 3: Part I

  This is a fully loaded blog post title if I ever saw one!!!!  And talk about photo-laden. Phew! Brace yourself people!

   We had a FABULOUS and crazy weekend! First up, the MCC Sale, which Dale and I have gone to every year since we were kids.  We both remember hanging out under the stage by the lake all day with our friends and can’t BELIEVE we don’t remember meeting.   The relief sale is so fun, and all proceeds go to help those in need across the globe…..I talked more about all of that last year.  We are always looking for fun places to go walk around as a family!

   And let’s not forget eating that yummy food! We don’t eat supper there, but do pack a few things to have snack time with their oh-so famous Cheese Curds and New Years Cookies!

Dale celebrated the big 3-1 on Saturday, and of course I made him his FAVORITE, Lemon Pudding Dessert!  That old post made me giggle when I re-read it.  (Might have been the image of me chasing a fox down the driveway in robe and slippers.)  AND, I couldn’t believe how much Paxton has changed, or my dessert photo!

  We partied it up down in the basement of my Uncle’s office, since there were HORRIBLE storms all through the mid-west, and we don’t have a storm shelter or basement!

Have you every tried to pack 6 people for an unknown amount of hours to go to a location with no toys or beds? This is what it looks like. IMG_7588

Plus a big bag of water and snacks. And a bean bag. And a trike. And the dog and cat. 

Ok, not the dog or cat, but the kids would’ve loved that. Oh, and in the end no bean bag or trike either. We quickly ran out of room in the Tahoe.

  While we were there with family, we went ahead and made the best of it, and had a mini celebration for Dale’s birthday!

The kids got to watch a movie, and I got some crafty stuff done.

 We were in that office basement from 5:30 to almost 10. At the time, 50 tornadoes had been sighted all around us, but all seemed to calm down after that, so we decided to head home.  Paxton snored the whole way, and as soon as we got there, Tylan crashed on the living room floor. Poor sleepy babies!  10:00 bedtime is A LOT different from the norm!

  Just as we unpacked the very full car, and had gotten all the kids down, a whole new batch of storms fired up SW of us.  At one point they thought they were coming to our town……GREAT, and we just got home, too!  We decided to keep an eye on things and just use our play closet for shelter if something changed.  Praise God, nothing happened!  {YAWN} That was a short night and a LOT of weather-channel watching!!!!! 

  The God we serve is such an AWESOME God!! Hearing reports of how tornadoes lifted just in time to miss entire towns…wow!  He hears our prayers and works in mysterious and wonderful ways!!  Now, while we are talking about praying, let’s pray we don’t have another night like that for a long time! Phew!  Over 100 tornadoes touched down all around us, over the course of the night and early hours of the morning. A nearby county reports an estimated total of $280 million in damage.  😦

   Windows Live Writer won’t let me post anymore, so the “Ree Makes 3” part of this post will be have to be continued…….
